Overview
A food dehydrator moves warm air over the harvest on stacked trays, driving moisture out fast enough to prevent spoilage without cooking the flavour away. Speed matters: the longer a fresh mushroom sits, the more it degrades. Most medicinal and culinary species dry fully between 40 °C and 55 °C.

Used immediately after harvest to reduce moisture and preserve quality.
Do not exceed the recommended temperature range. Above roughly 60 °C you risk losing heat-sensitive compounds and cooking the texture before the interior has dried.
Practical advice
A properly dried mushroom snaps like a crisp instead of bending like leather. If the stem flexes without breaking, put the tray back — partially dried mushrooms mould in storage.
